TUOLUMNE, CA (May 4, 2007) – Bountiful strawberries are grown near Black Oak Casino’s location in the Sierra foothills, just east of Sonora in Tuolumne, California. Executive Chef Ed Wickman will take advantage of this local delicacy by featuring a variety of original, strawberry-infused dishes at The Mill Sports Bar & Grill during the month of May.
The Mill diners can enjoy such unique creations as Pan-Seared Pork Medallions with spiced-caramelized onions and strawberry chutney, or an entrée of Grilled Swordfish Steak with strawberry mango salsa and pesto basmati cous cous.
Each week, The Mill will feature a signature strawberry salad: The week of May 14th a fresh Spinach Salad with sliced strawberries and candied pecans will be offered, while the week of May 21st a Grilled Chicken Salad with strawberries and mixed greens will be on the menu.
For those who like their strawberries extra sweet, Wickman has created an assortment of delicious desserts to finish off any meal, including Fried Cheesecake with strawberry glaze, a homemade Strawberry Pie with chocolate crust, a Brownie Sundae with grilled glazed strawberries, and Baked Strawberry Shortcake topped with whipped cream.
The strawberry is the first fruit to ripen in the spring. At Black Oak Casino, they herald the introduction of fresh summer produce, which plays a key role in the seasonal cuisine offered within the casino’s three restaurants. In addition to their luscious flavor, strawberries are packed with health benefits. Eight medium-sized strawberries contain 20% of the U.S.D.A.’s recommended folic acid intake and 140% of the recommended daily dose of Vitamin C.
